I want to know what if take something from Tonks and use it in a Polyjuice potion. Do i change into an Metamophagus, or do i become tonks, or the person she was at that time?

Well with polyjuice potion you gain the other persons appearance, not their abilities, so I assume that you'd just gain tonk's normal appearance? Idk though
