Honestly, probably Moody (Barty Crouch). He actually knew what he was doing as he was a Death Eater (disguised as an Auror). Other than that, Snape or Lupin. Lupin was good because he was always well versed in that area and Snape had a lot of field experience (but he sucked at being nice to people).

Snape was probably bad at being nice because he had a horrible backstory-I honestly can't blame him-in my opinion, at least-

Umbridge, of course! Quirrell is a close second.

Just kidding. Lupin, of course! Fake Moody was good as well despite being a death eater.
