I don't really understand the options, which would translate to "everything"?

^ I'm trans too (a feminine one she wouldn't consider a "real" feminine person, too, which makes me hate her more), if she says anything transphobic that affects to HP series I'll ignore whatever she says.

As the wiki goes, Rowling’s word on the Harry Potter universe is law. This doesn’t mean I agree with a drop of her personal views, as they’re strictly horrible, but I have to agree with what she says of the HP Universe

If an author says something about their creation, then I generally consider it to be canon, and based on this, what J.K. Rowling says about the Harry Potter Universe should be assumed to be canon.

I only accept what I think it is canon, not her unless it was featured as a main plot.

Yeah, JKR's judgement hasn't been working right as of late, if she just says, like, Voldemort got his inspiration from Grindelwald by using a time turner and talking to him, I wouldn't call it canon because there was no evidence for that and it makes no sense, it's just so random.
