The other victims wouldn't have been able to drink it either, on account of being petrified. Therefore I would assume that exposure to the Mandrake Restorative Draught would be enough to cure petrification. We know a petrified ghost can be moved around with a fan, as that is what McGonagall had Ernie do to Sir Nicholas, so a spray would likely have an effect as well.
