1) As far as I can tell, JKR didn't say this. Searching for the post on JKR's profile on X/Twitter returns no results. Similarly, putting it into Google returns nothing but Facebook posts reposting the same image. Note that in the screenshot, JKR isn't replying to an actual thread- the image appears to be stitched together.
This is JKR's real answer to that question in an interview:
"Harry did not see his parents die. He was one year old and in a cot at the time. Although you never see that scene, I wrote it and then cut it. He didn’t see it; he was too young to appreciate it. When you find out about the Thestrals, you find that you can see them only when you really understand death in a broader sense, when you really know what it means."
Fine, let's say that she did say this. Let's say that the original tweet was removed and the person that screenshotted just wanted to format it in a more amusing way. Based on other screenshots, it appears that JKR used that profile picture around 2020, before most of the drama with Emma Watson (note that she has a different profile picture now). The screenshot would not have been recent, and at any rate, I personally don't see how it connects to that controversy either. It was about fictional characters. Don't read too much into it.
2) This is pretty interesting, but just because two pieces of media seem similar doesn't mean one had to have plagiarized the other. That "innocent lady"? When taken to court, the judge ruled that "Stouffer [had] perpetrated a fraud on the Court through her submission of fraudulent documents as well as through her untruthful testimony, including changing pages years after the fact to retroactively insert the word 'muggle'." Often, when you see or hear about something, you have to assume that you don't know the whole story. Maybe we still don't know the whole story. But coincidences happen, it's hard to prove that someone else copied your work, and I'm inclined to believe the court if her accusations came off strongly enough for her to be fined $50,000 at the end of the trial.
