The students enter Hogwarts at a very low grade. Surely they are not yet educated much in English. How do wizards and witches manage to be able to talk with advanced English words if they never learned them?

In the last book where they are at the coffee shop, Hermione claims she has never done a memory charm before, but she had already done at least one when she was modifying the memory of her parents
How come in the last book where Harry is in his last year at Hogwarts, Cho, who is one year ahead of him still in Hogwarts?
