Corned beef sandwiches were prepared by Molly Weasley for the journey to Hogwarts on the Hogwarts Express. Ron Weasley was not particularly fond of these sandwiches, but his mother always seemed to forget.[1]
By Ron's third year at Hogwarts, Molly remembered, and she assured him that his sandwiches weren't corned beef before he could even ask.[2]

In the film adaptation of Harry Potter and the Philosopher's Stone, Ron Weasley was seen holding a sandwich his mother gave him. It is very possible that this was a corned beef sandwich.
